Easy Home Made Tomato Relish
Great to have a few jars of relish or chutney in the cupboard.
Super easy to make, delicious on your burgers & sandwiches.
Made from ingredients most of us have in the cupboard, a few jars, & voila!

TOMATO RELISH/CHUTNEY RECIPE
10 Ripe roma tomatoes
2 Red onions chopped
1 cup raw or demerara sugar (I used less)
1/2 cup apple cider vinegar
1 tsp turmeric
3 tsp salt flakes
1 tab finely chopped or grated ginger (I used more)
2 cloves crushed garlic
1 tsp dried chilli flakes
Place all ingredients in a pan over low heat to dissolve the sugar.
Bring to the boil and stir occasionally for an hour.
Prepare 2 or 3 x 500ml jars by bringing to the boil, completely covered by water, with the lid on.
Remove jars from the boiling water and invert
Using a jug pour hot relish into jars, lids on.
