Best Ever Fruit Cake Recipe

This very quick and easy gluten free and sugar free fruit cake is worth making, even if you are not a fan of fruit cake, it is delicious!

INGREDIENTS
600 grams mixed dried fruit - sultanas, raisins, apricots, glace cherries
200 grams ground almonds
1 teaspoon ground cinnamon
1 teaspoon vanilla bean extract or paste
1/4 teaspoon ground nutmeg
zest & juice of an orange
3 tablespoons virgin olive oil
3 organic eggs
50 grams walnuts, I prefer almonds
METHOD
PREHEAT
Oven to 150 degrees C
PREPARE
Grease and line a springform cake tin
COMBINE
Dried fruit, spice, orange juice, zest, beaten eggs & olive oil ADD
Ground almonds & walnuts
MIX & SPOON
Into the prepared tin
BAKE
One hour and thirty minutes
Or until skewer comes out clean
COVER
The top with foil, if necessary during baking to prevent burning
REMOVE
From the tin when cool
STORE
In airtight container for several weeks, if it lasts that long!
TIPS
I find this cooks much more quickly than the hour and a half, so keep an eye on it, especially in a fan forced oven
Use any combination of dried fruits, in proportions that you like
You could soak the fruit in brandy, sherry or orange liqueur whilst getting ready the other ingredients, or once the cake has cooked, skewer some holes in the top and pour a little over
