Easy Pasty Slice

A delicious way to eat more vegetables.

Empty the crisper and follow this easy recipe to make a pasty slice or traditional individual cornish pasty.

Can be eaten cold and makes a great addition to the lunchbox.

This is a basic guide, however use any vegetables you have or prefer.

I cook the diced vegetables in chicken stock first, to soften, this also makes the mix much more flavoursome. Then toss in a little butter, garlic, parsley & thyme.

If time is short use a premade puff or shortcrust pastry Creme All Butter is a good brand. Here are a couple of recipes to make your own pastry, including gluten free options.

Ingredients

FOR THE FILLING:

2 Carrots

1 Potato

1 small Sweet Potato

100 gm Pumpkin

2 small Swede

1 Medium Onion

2 Cloves Garlic

Sprigs of Thyme

Chopped Parsley

Optional: Cooked minced beef (I chopped a small piece of beef & cooked prior to adding)

Dice the vegetables same size & finely chop the onion

Simmer vegetables in water, vegetable or chicken stock until just soft

Saute the chopped onion in a pan with either a little butter or oil

Add & toss drained vegetables in pan with crushed garlic, thyme & parsley, season to taste

Leave to cool before placing on pastry

FOR THE PASTRY

300 g Plain Flour

Pinch of Sea salt

120 g Butter

1 Egg Yolk

1-2 tablespoons Cold Water

Rub the butter into the flour with fingertips, to look like breadcrumbs

Add yolk & water to bring together

Knead gently to a smooth ball

Wrap and rest in the fridge half hour

GLUTEN FREE PASTRY

2 tsp Ground Chia Seeds

200 gm Almond Meal

70 gm Arrowroot flour

Pinch Xanthan Gum

70 ml Hot Water

1/2 tsp Bicarbonate of Soda

Pinch of Sea Salt

In a small bowl mix chia seeds, xanthan, and hot water together, rest it until a gel forms

Mix almond meal, arrowroot, bicarb & salt

Mix these two together, more water if required

Wrap and rest in fridge

Place vegetables across a sheet of pastry, with enough filling roll

Egg wash the join, pinch the ends together

Egg wash the top also & sprinkle with sesame seeds

Cook in a moderately hot oven until the pastry is golden

For individual cornish style pasties, cut rounds of pastry, place vegetable in the centre

Join pastry edges together. Pinch edges together to seal creating a frill.
